Flourless Chia Oat Breakfast Bars

Makes 12 servings | Vegan, Gluten-Free, Refined Sugar-Free, Oil-Free, Soya-Free


Berry Chia centre:

  • 1 cup mixed blueberries and raspberries
  • 1 tbsp honey (or maple syrup or agave nectar)
  • 2-3 tbsp chia seeds
  • Dash almond milk

Flourless Oat bars

  • ½ cup GF rolled oats
  • 1 scoop vanilla protein powder (or ¼ cup almond flour or GF flour)
  • 2/3 cup almond meal
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • 1 mashed large ripe banana
  • 2 tbsp apple sauce
  • 2 tsp vanilla extract
  • 2 tbsp honey or maple syrup
  • Dash almond milk

For the berry chia centre, blend all the ingredients in a blender or food processor and set aside for at least 20 minutes.

Using 8 x 8in baking dish. Mix the dry ingredients and set aside. Mix together wet ingredients (banana, apple sauce, vanilla extract and honey) and add this to the dry ingredients. Mix until dough has formed. Press 2/3 of the dough into the base of the lined baking dish. Cover base with the berry chia mixture. Sprinkle the remaining dough clumps on top of the berry layer, leaving a few areas of berry exposed. Sprinkle with more cinnamon, chia seeds, and desiccated coconut.

Bake 350F/180C for 25-30 minutes. Let this cool, then cut into squares and serve with a drizzle of honey.
