Summer Berry Cobbler:

Vegan, Gluten free


For the crust:

  • 1 cup almond meal
  • ½ c GF flour
  • 1 teas baking powder
  • 5 tbs cold butter or Ghee (cut into small chunks)
  • Sprinkle Cinnamon optional
  • Berry Filling:
  • 1 ½ c mixed berries (I used blackberries, raspberries, strawberries and blueberries)
  • ½ c coconut sugar
  • 3 tbs corn Flour
  • Dash cinnamon
Summer Berry Cobbler:


Mix all the berries with sugar, cornflour and cinnamon. Pour into an 8 x 8in round baking dish.

In a separate bowl mix almond meal, flour, baking powder, sugar and chilled butter and use either your hands or 2 forks to knead the mixture together until clumps form.  Sprinkle crust chucks over berry mixture. Bake 375F for 40-45 minutes or until crust is well browned and toasted.

Serve warm with whipped cream or ice cream
