Mini Chocolate Cherry Galettes

Makes 4 galettes, Vegan, Gluten free, refined sugar free, high protein

Ingredients

Ingredients

Base:

  • 3 scoops vanilla protein powder
  • 2/3 cup coconut or almond flour
  • 1/2 cup ground flax
  • 1 teas baking powder
  • pinch salt and cinnamon
  • 2 eggs (flax or chia eggs for vegan option)
  • 1/3 cup coconut oil melted
  • 1 cup almond milk
  • 1 teas vanilla extract
  • 2-3 tbs agave nectar

Chocolate filling:

  • 1 cup cacao powder
  • 1/2 cup coconut oil melted
  • 1/2 cup almond milk
  • 3 tbs maple syrup or agave nectar

Mini Chocolate Cherry Galettes

Method:

For base of galettes, mix all the dry ingredients and set aside.  Mix the remaining wet ingredients, add in the dry and mix until dough forms.  Roll out dough to about 1/8 inch thick and cut into 5″ x 5″ squares.

For Chocolate filling, simply mix all the ingredients and add into centre of galette dough. Fold over about 1/2 inch of the edges of the dough pinching sides if needed not to allow chocolate to spill out. Top with cherry halves.

Bake at 325F for 25 minutes

Remove from oven and let cool. Drizzle with additional chocolate, add whipped cream or vanilla ice cream (optional)
